Production of protein hydrolysate containing antioxidant activity from Hermetia illucens

Protein hydrolysate from black soldier fly larvae (Hermetia illucens) has successfully produced through enzymatic hydrolysis utilizing bromelain enzyme. Mochamad Firmansyah and Dr. M. Yusuf Abduh reported that It exhibited antioxidant activity against free radical substance, DPPH. It is considered that high content of hydrophobic amino acid, particularly Leucine, Lysine, and Valine contained in it contribute to its bioactivity.
